Almond Orange Coconut Snack Cake Recipe

Directions
Preheat oven to 350 degrees.Mix banana and sugar until smooth. Stirin orange juice and vanilla extract.In separate bowl, sift together flour,baking powder, and salt. Stir incoconut and almonds. Add dry ingredients to wet ingredientsand stir. Pour batter into a greased 8 x 8 bakingdish, making sure to spread the batterevenly over the bottom of the dish. Bake at 350 for 15-17 minutes, or untillight golden brown (and toothpickinserted in middle comes out clean).Delicious warm, slices easier when a bitcooler. Good on day 2, 3...(I haveusually eaten it all by day 3). This ispleasantly sweet, but it is not SUPERrich and gourmet dessert-ish. Adjustsugar to taste accordingly. Also,although it comes out flatter, like abrownie, expect the texture to be morecake-ish than brownie-ish. Yum, justthinking about it is making me hungry...
