Apple Cinnamon Pecan Pancakes RecipeTagged in Vegetarian
Mix flour, soy milk, egg replacer, water, oil, 1 t of vanilla, and cinnamon. Add 1 apple and a handful or two of pecan pieces.Ladle about 1/3 cup or so of mixtureonto a heated and oiled crepe pan.Cook over medium heat until bubblesbegin to appear on top side (approximately 1 minute or so).Flip and cook on the other side until brown (about 1 additional minute).Place the finished pancakes in the oven to keep them warm while making the topping.In heated pan, pour about 2 teaspoon of vanilla, add second apple, another handful of pecan pieces, syrup, and a little sugar, if desired. Cook until apples soften a little, about 2-3 minutes.Spoon topping over pancakes and enjoy!
