Directions

Wash the rice, put in a bowl, cover with waterand leave for soaking. Meanwhile, put the soy cubesin a separate bowl and pour over it hot vegbroth, cover, leave for 5-10 min (the bigger thesoy cubes are, the longer it must soak). Chop thegarlic. Heat the olive oil in a pan and put on itgarlic, curry and herbs - fry a bit for theflavor developing. Squeeze the soy cubes as dryas you can, but reserve all the liquid, and addthe squeezed soy to the pan and fry for a while.It will be delicious if the soy will be a littlegolden brown. Now add the rice (without water)and fry stirring until some rice absorb the oiland look a bit translucent. Mix well and and thesoy soaking broth, salt and cook until theliquid is absorbed. At this moment you can addsome broccoli, paprika , tomatoes or mushroomsif you want to make this dish more rich in tasteand color. Serve hot and enjoy!

  • 3-5 garlic cloves curry herbs - upon your taste 1 cup rice 3 cups vegan broth (hot) 2 cups soy 'mincemeat' or soy cubes salt olive oil
