Chayote & Lotus Root With Curry Paste RecipeTagged in Vegetarian
Mince garlic and onion and fry in pan until golden. Add curry paste and mix well. Peel
and cube lotus root and add. After 2 minutes add peeled and cubed chayote. Let simmer for
about 10 min, then add diced mushrooms. Let simMer for another 2 minutes. Serve over rice,
couscous, or in a pita as a sandwich.
* I used mild curry paste, but according to taste hotter one can be substituted.

- 2 teaspoons curry paste
- 1 to 1 1/2 cups mushrooms
