Country Soup (soupa Horiatiki) Recipe

Directions
# Saut? the onions in the olive oil until they become transparent
# Add the vegetables, bacon and beefstock or bouillon cube and season to taste
# Bring to the boil and cook on a medium heat for about an hour
# Serve the soup warm with dashes of lemon juice

- diced
- # 3 medium carrots
- scraped and diced
- # 3 medium courgettes(zucchinis)
- diced
- # 3 onions
- finely chopped
- # 2 leeks
- sliced
- # 3 ripe tomatoes
- sliced
- # 8oz. bacon
- roughly cut
- # one and a half teacups of olive oil
- # beef stock or a bouillon cube
- # salt and pepper
- # lemon juice
