Halloween Chicken Hash Recipe

Directions
# Heat the oil in a large pan, add the onions and fry until tender
# Add the chicken pieces to the potatoes and mash them together
# Blend chicken stock in to the mash until it is creamy then add salt and pepper to taste
# Add the mash to the onions in the pan and flatten the top of the mixture
# Fry the mixture in the pan until the bottom is crisped and browned then fold over like an omelette
# Lift on to a warmed dish and serve

- # 12oz (350g) cooked chicken divided into small pieces
- # 3 medium onions
- thinly sliced
- # 6 tbsps. chicken stock
- # 12oz. (350g) cooked potatoes
- # oil for frying
- # salt and pepper
