Highland Sauce Recipe
Black Cuillin Beer
Takes about 25 Minutes
Serves 4
Distinct, Isle of Skye ,rich sauce to go with either venison or roast sirloin.

Prep Time: 20 minutes + Cook Time: 5 minutes = 25 minutes
Directions
Melt the butter.
add the shallots and garlic and sweat off.
add flour to make a roux.
add little veg stock to get a thick sauce,beat well to keep smooth.
add some of the beer keeping the sauce still thickish
add the mixed berries with the honey and tomato puree.
allow to cook out for 15/20 mins
add lemon juice and seasoning to taste
now can be either all pureed or left as is.
If pureed garnish, when served, with fresh brambles.

- Black cuillin beer
- or if not available heavy dark beer.
- Mixed black berries
- veg stock
- fine dice of shallots
- fine dice of garlic
- honey
- flour
- butter
- tomato puree
- seasoning
- lemon juice
- all amounts are related to number of guests; so left to your discretion
