Irish Peasant Lunch Recipe
Tagged in Vegetarian
Directions
Cut the cabbage into about 1/4 to 1/2 inch strips (doesn't
have to be exact). Cut the potato into smallish cubes.
Slice the onion into medium sized pieces. Put all of it
into a saucepan with about 1/2 inch of water. Boil it all
for as long as it takes to cook the potatoes to your liking.
I don't have exact amounts because you can use as little or
as much as you like to serve your particular fancy. I used
about half a head of cabbage, one potato, and half an onion
for 1 large serving or 2 small ones. Season as you like --
I use a little salt and some Mrs. Dash. I like to eat this
with brown mustard but you don't have to. Enjoy!
Ingredients
- green cabbage
- red potato
- onion
- seasonings of your choice
- brown vegan mustard (optional)
