Here is an easy but very tasty recipe.
Soften the onion in some butter. Add all the other ingredients and bring
to the boil. Simmer for about 30 mins. Allow to cool and then liquidise
(remove the bay leaves first :-))
- 1 lb ripe tomatoes
- skinned and chopped.
- 1 medium onion chopped.
- Crushed garlic (to taste)
- 1 medium potato finely chopped.
- About 1 pint of vegetable stock.
- 1 tablespoon tomato puree.
- 2 bay leaves.
- S + P to taste.
