Pecan Surprise Cookies Recipe

Directions
Preheat oven to 325 degrees.
Cream margarine in a large bowl. Add vegan sugars and applesauce.
Beat well. Stir in oil and vanilla.
Combine flour, soda, salt, and oats in a large bowl. Add
Wheaties, coconut, and pecans. Blend well.
Add dry mixture to butter mixture. Mix well. Shape into
1-inch balls. Place on an ungreased baking sheet and mash
lightly twice (once lengthwise, once widthwise) with a fork.
Bake for 15 minutes.

- 1 cup non-hydrogenated vegan margarine
- softened
- ¾ - 1 cup vegan sugar
- ¾ - 1 cup firmly packed vegan brown sugar
- 1/4 cup unsweetened applesauce
- 1 cup oil
- 1 teaspoon vanilla extract
- 3 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup uncooked oats
- 1 cup crushed Wheaties (cereal)
- ½ cup coconut
- ½ cup finely shopped pecans
