Sauté the peppers in the oil over medium heat for 3 minutes, add the garlic, zucchini and thyme and sauté another 5 minutes. Cook the pasta in boiling water for 8 minutes, pour in colander and run a bit of cold water over it.
Combine the cheese and yogurt in a blender and process til smooth. Stir the cheese into the pepper mixture and toss with the pasta.
- * 3 T. olive oil
- * 1 each - red
- yellow and green peppers - seeded and sliced thin
- * 2 cloves garlic
- * 1 medium zucchini
- * 1 tsp. dried thyme
- * 10 oz. penne or other hollow pasta
- * 3/4 c. ricotta cheese
- * 3/4 c. plain yogurt
