Zucchini Patties Recipe

Directions
Combine zucchini, cheese, nuts and vegan bread crumbs. Mix well. Add enough water to make a
very thick mixture. Let sit 30 minutes. Shape into patties and fry until browned on both
sides, or bake in oven at 350' for 20 minutes.
To serve: top with spaghetti sauce just before reheating.
Please note: This recipe doesn't have any eggs, if you top it with the sauce and leave it
overnight in the fridge, you will end up with something resembling oatmeal mush and tomato
sauce. Not a pretty sight! ;-) This does work great though, if you follow the
directions exactly.
Ingredients
- 2 cup zucchini
- grated
- 2 cup shredded soymage cheese
- Soya Kaas cheese
- or drained tofu
- 4 cups seasoned vegan bread crumbs
- 1 cup chopped nuts
- 1 to 1-1/2 cups water (as needed)
- 1-1/2 large jars spaghetti sauce
