8 oz Egg Substitute
1/2 cup Lean Ham
1 tbsp Dijon Mustard
1 tsp Parsley Flakes
1 tsp Black Pepper
1 cup Potatoes, cubed
1/4 cup Sliced Mushrooms
2 tbsp Green Pepper, chopped
Directions
Preheat broiler.
In bowl, combine egg product, ham, mustard, parsley and black pepper.
Set aside.
Preheat skillet, sprayed with vegetable oil spray, over medium heat.
Saute potatoes, mushrooms and green pepper until tender, stirring occasionally.
Pour egg product mixture over vegetables.
Cook four to five minutes or until bottom of skillet is set.
Place skillet in broiler 6 inches from heat.
Broil four or five minutes or until lightly browned.
