Fried pasta crisps


Ingredients

1/2 lbs Any small filled pasta
Oil for frying
1/3 cup Parmesan
1 tsp Dried basil
1/8 tsp Cayenne
Garlic salt


Directions
  1. If pasta doesn"t feel moist and supple, cover with boiling water and let stand until softened, 5 minutes.
  2. Drain.
  3. Spread soaked pasta on a 10x15" baking pan lined with paper towels.
  4. Blot pasta gently and let dry 5 minutes.
  5. If pasta feels moist, omit saoking and drying step.
  6. Meanwhile, place 1/3 of the pasta in a skillet with heated oil.
  7. Cook, turning occasionally, until golden and crisp, 2-3 minutes.
  8. Remove with slotted spoon and drain.
  9. Serve or keep warm in a 200°F oven up to 30 minutes while frying remaining pasta.
  10. In a bag, mix cheese, basil, cayenne, and garlic salt to taste.
  11. Add warm pasta and shake to coat.
  12. Pour into bowl.
  13. Offer pasta with cocktail sauce for dipping.
  14. Makes 60-80 appetizers, 10-12 servings
