Potatoes Ala' Stan Recipe

Directions
Lay out the spinach on a plate, top with the other veggies (except the green onions.) Top the veggies with the herb roasted potatos, then top it all with the green onion. (At this point, I like to warm up the whole thing in a microwave for about 2 minutes.) Then, top the whole yummy mess with either: Ingredients (use vegan versions): Hollandaise sauce Salsa or an herb salad dressing (I sometimes use all three!) Serves 2. - 2 cups of herb roasted potatos. (To make herb-roasted potatos
- boil about six whole red or white potatos
- then let them cool in a pan of cold water. Dice the potatos and spread them on a oiled cookie-sheet. Top them with lot's of herbs and spices. (Whatever you happen to have around will do! I like to use paprika
- pepper
- onion powder
- garlic powder
- A mix of whatever veggies that you like. I use the following: Ingredients (use vegan versions): Spinach leaves Red bell-pepper sticks Thin carrot slices or triangles Artichoke hearts Thin sliced green onion Zucchini or yellow summer squash wheels Fresh raw sweet corn kernels Roma tomato slices
