Veal Scallopini Recipe

Trim veal well and cut into 6 pieces. Combine flour, salt, and pepper; sprinkle onto both sides of veal. Melt butter in Teflon skillet; add veal and brown quickly on either side; transfer to hot serving platter to keep warm. Add mushrooms and saute about 5 minutes; add beef broth and sherry. Cook over high heat for about 1 minute. Serve over veal.

- 1 1/2 lbs. veal
- round or loin
- 2 tbsp. flour
- 1 1/2 tsp. seasoned salt
- Dash pepper
- 1 tbsp. butter
- 2 c. sliced
- fresh mushrooms
- 1/4 c. beef broth
- 2 tbsp. dry sherry
