Easy Miso Soba Soup With Edamame Recipe

Directions
Saute chopped onion in oil over med.
heat until soft. Add garlic and cook for
1 minute. Add a splash of rice
vinegar and the ground ginger. Add
water and turn heat up to high to
bring to a boil. Add boullion cube and
stir until it dissolves. Add edamame.
Bring to boil again and add noodles.
Cook for 6 minutes or until noodles
are soft. Remove from heat and add
miso cup packet. Enjoy!
Ingredients
- 1/2 small onion
- chopped
- 1 clove garlic
- minced
- sesame oil
- rice vinegar
- 2 teaspoons ground ginger
- 4 cups water
- 1 vegetable boullion cube
- 3/4 cup frozen edamame (varieties of soybeans harvested in the green stage)
- handful of uncooked soba noodles
- 1 packet of miso cup soup w/ seaweed
